Perfect Pudding Cookies

I have not abandoned you, vast readership. This summer has been a bit crazy for us, as you'll see in a coming post. But, I made these cookies last night, and they're almost perfect. Except that whole calorie thing... Make 'em and hide 'em and forget about that whole calorie thing. Enjoy!


 

Perfect Pudding Cookies

Makes about 2 1/2 dozen
 
Ingredients:
2 1/4 c. all-purpose flour
1 t. baking soda
3/4 c butter (1 1/2 sticks) softened
3/4 c. brown sugar, packed
1/4 c. white sugar
 1 (3.4 oz.) pkg. instant vanilla pudding
2 eggs, room temp
1 t. vanilla extract
2 c. of add-ins (I used Heath milk chocolate bits, but chocolate chips, 
reese's pieces, anything would work)
 
  1. Preheat oven to 350 degrees. 
  2. Stir together flour and baking soda in separate bowl and set aside.
  3. In a large bowl, cream butter, brown and white sugar. 
  4. Beat in pudding mix until well blended. 
  5. Stir in the eggs and vanilla. 
  6. When smooth, slowly add in the flour mixture. This can take a little while, but make sure it's well incorporated into mix.
  7. Stir in add-ins.  
  8. Use melon ball scoop or spoon to roll uniform cookie balls. 
  9. Bake on parchment paper lined or greased cookie sheet for 8-12 minutes until very lightly golden. 
  10. Enjoy!
These cookies are quite honestly perfect. I think they're my new go-to chocolate chip cookie.
